秋风起，蟹脚痒，立冬已过，凉爽的秋风比往年来得更晚些，当下已经进入品蟹最佳之时。“上周（11月12日），上海海洋大学第十八届蟹文化节暨2024年“王宝和杯”全国河蟹大赛在上海王宝和大酒店举行。”上海市河蟹产业技术体系首席专家、上海海洋大学教授王成辉介绍，“而今天，我们联合上海市农业科技服务中心，共同举办上海市农业科技科普宣传‘蟹文化进校园、进社区’启动仪式，就是延续精彩，让蟹文化‘飞入寻常百姓家’，让更多人了解大闸蟹的生态价值、经济贡献与文化传承，在品味美食的同时，还能感受到其中蕴含的深厚文化底蕴。”

Today, in partnership with the Shanghai Municipal Agricultural Science and Technology Service Center, we are jointly hosting the launch ceremony of the Shanghai Municipal Agricultural Science and Technology Campaign 'Crab Culture Entering Campus and Community', continuing the excitement and bringing crab culture to the ordinary people's homes, allowing more people to understand the ecological value, economic contributions, and cultural heritage of hairy crabs. “今天，我来学习了如何挑选大闸蟹。”围在海创市集蟹文化宣传展台的海洋生物资源与管理学院胡天佑学到了挑选螃蟹的小妙招，“首先，我们要学会算时间，‘九雌十雄’是老祖宗传下来的经验，农历九月吃雌蟹，农历十月吃雄蟹。其次，要看一看螃蟹的背部，如果呈现青绿色，说明螃蟹已经完成了最后一次脱壳，蟹膏即性腺已经发育成熟。最后，还要翻一翻螃蟹，把螃蟹背部朝下，看它们是否能迅速翻转回来，活力充沛的螃蟹更值得选择。我马上把这些小攻略分享给了家里长辈。”

First of all, we need to know how to calculate the time. 'Nine females and ten males' is an experience passed down from our ancestors, which means eating female crabs in the ninth lunar month and male crabs in the tenth lunar month. Secondly, take a look at the back of the crab. If it is greenish-blue, it means the crab has already completed its final molt, and the crab roe, the gonads have matured. Finally, flip the crab over, with the back facing down, to see if they can quickly flip back, indicating that the lively crabs are worth choosing. I immediately shared these tips with my family members.

上海人俗称的大闸蟹，其学名为中华绒螯蟹。“江海21”是中华绒螯蟹的新品种，由上海海洋大学教授、上海市中华绒螯蟹产业技术体系首席专家王成辉团队历时10余年选育，2016年农业农村部发布公告全国推广。“江海21”是螃蟹界的“大长腿”，其第二步足长节末端达到或超过第一侧齿尖端。“江海21”也是螃蟹中的“高富帅”，个个身强体壮，壳青，肚白。它生长快，规格大，产量高，具有成活率高、遗传稳定等优良特征。

The hairy crabs known to Shanghai people are scientifically called Chinese mitten crabs. Jianghai 21 is a new breed of Chinese mitten crab developed by Professor Wang Chenghui's team after more than 10 years of breeding at Shanghai Ocean University. It was officially promoted nationwide by the Ministry of Agriculture and Rural Affairs in 2016. Jianghai 21 is known as the 'long-legged' crab in the crab world, with the end of the second walking leg segment reaching or exceeding the tip of the first lateral tooth. It is also known as the 'tall, rich, and handsome' crab, with strong bodies, blue shells, and white bellies. It grows fast, has a large size, high yield, and features such as high survival rate and genetic stability.

“大闸蟹出炉，团圆饭开饭啦！”在“家的味道——海大团圆饭”环节中，学校现场送出了“江海21”大闸蟹和蟹黄包，供在校师生、校友和社区居民免费品尝。“‘左手持蟹螯，右手执酒杯。’古人眼中，螃蟹壳圆、蟹黄饱满，象征着圆满与丰收的祝福。我们在校庆之际为大家送上学校自己的大闸蟹，非常应景。”上海海洋大学副校长倪卫杰说。
